Cheesecake Tarts in CookBook Swap


Cheesecake Tarts
-2 (8-ounce) packages cream cheese, softened
-1 1/2 cups sugar
-4 eggs
-2 teaspoons vanilla or lemon extract
-1 box of vanilla wafers
-2- (21-ounce) can cherry pie filling
*Line muffin cups with paper liners.*Beat cream cheese in a medium mixing bowl until soft and creamy. *Gradually add sugar, beating until light and fluffy.* Add eggs, one at a time, beating well after each.*Stir in vanilla or lemon extract.* Place a vanilla wafer in each paper lined muffin cup; spoon cream cheese mixture over wafers, filling lined muffin cups almost full. *Bake at 350° for 15 minutes. Do Not over bake!*Chill then spoon pie filling on top and chill again.
-Makes about 36 mini fruit cheesecakes. Great for any holiday or special event.

I just finished a CookBook Swap and this is one of the recipes that I included,. . .I did the illustration too! The top photo is the book I received from Kay! Isn't it beautiful?!? I also just got the measuring spoons from my sister! A 4th of July gift! Now I can measure a Nip, Smidgen, Pinch and a Dash! Thanks Andi!

These are so scrumptious! I have mead ethem before vary the fruit for a nice colorful display!

I also like Blueberries for the red,white and blue look! Add a green mint leaf for the winter holidays!
